Prosecco is larger than life and has earned its place as a household name for bright, sparkling wines as playful as they are uplifting and yet few know of the land, methods and the people from which they come.

Adami Prosecco Vigna Giardino 2010 
Characteristics: Ah… single vineyard Prosecco that is generously fragrant yet invitingly fresh. Floral nectarine and apricot blossom wrap the palate in an invigorating textural mousse so fine you’d take a second glance to make sure this Brut is actually Prosecco except for its delightful delicate fruit that gives it away –this is premier cru Prosecco.

“The Giardino vineyard (historically "vigna Zardin") has its beginnings in the Adami family in 1920. The land, the microclimate, and the personal and passionate care of the owners qualify it as a true "cru" of the Prosecco area. A rare and prestigious example of how technique can be wed to tradition, the Vigneto Giardino spumante exalts both elegance and typicality. The fruity fragrance is delicately aromatic, the taste is harmonious, almost velvety, but with a dry ending that makes it versatile, able to offer the most pleasant of sensations before, during, and after the meal.”

Col Vetoraz Prosecco Brut  
Characteristics: 100% Prosecco
Light and frothy but as dry as Death Valley. It seems strange to be drinking Prosecco without the subtle sweetness that helps to pretty that baby up and round out the floral aromas. There is orchard fruit to be sure, but a cold hardness as well. Drinking this makes you want to go beat something up. If you always wanted a more macho Prosecco, this was custom made for your purposes! -BH

Col Vetoraz Prosecco Valdobbiadene  
Characteristics: Shame on me! I almost forgot how much this wine means to my taste-buds! A deliciously floral, frothy, satisfying Prosecco she is. It is like taking good pear cider –REAL pear cidre from Normandy, and making it into a soufflé. A bubble-bath for your very soul! -BH

Il Follo Prosecco  
Characteristics: Il Follo Methodo Charmat Prosecco, Extra Dry, DOC | 11.5% | Bottled in February 2015 | From the calcareous clay slopes of the Treviso Hills, this Prosecco is 100% Glera planted in the 1960s. A Prosecco that is soft and gentle with insights that prove it’s listening to what one wants of Prosecco and yet so much more. As if the prettiest girl in school was also the dearest to everyone she met, this winsome sparkling wine is all smiles and nonchalant kindness and more.

A lovely meringue of pear drops and mandarin peels lends to its immediate appeal as does a fine creamy texture balanced by a mineral note and a wisp of fresh thyme this makes for a charming wine –a complete wine, of remarkable depth for what many mistake as a coquettish category. Prosecco is never onerous or demanding. It was born to be playful, easy and refreshing. A hint of residual sugar may even make this off-dry and lift its fruit to a fragrant bouquet but this has more than mere good looks and a sweet demeanor. Prosecco like this is generous and plays-well-with-others especially dishes with savory spice, a little heat, a delicate sweet broth or those involving fruit. A Prosecco to share soon and often.

Il Follo Rose  
Characteristics: Beautiful gemstone pink color. The nose is of strawberries and a little yeast. There's bright yet sweet cherry hard candy on the palate that's perfectly balanced by its acidity and fine mousse. -DYB
70% Glera (the variety formerly known as Prosecco which is now strictly speaking an appellation among the DOCG)& 30% Cabernet Sauvignon
