Baumard Clos Du Papillon Savennieres 2014 
Characteristics: 100% Chenin Blanc from 35 year old vines planted to this single vineyard's schistose sandstone and ingeous rhyolite soils -an absolute marvel and Chenin Blanc at its best.

Domaine des Baumard produced some of the finest examples of Savennieres, including the single-vineyard "Clos du Papillon" from a site along the Loire notable for the presence of soapstone in its slate soils. Jean Baumard and now his son Florent are universally regarded as the finest winemakers in the appellation. Their wines are among the most unique and rewarding in the world: honeyed, dry whites of unmatched concentration, perfume, and longevity.

The butterfly shape of the vineyard gives "Clos de Papillon" its name. The soils are predominantly made of schist, sand and sandstone over rhyolite. The vines are 35 years old. Harvest is performed manually in successive passages through the vineyard. The grapes are whole-bunch pressed and fermented in stainless steel at low temperatures. The wine then remains on the lees for 9 months in tank before bottling.

Domaine des Baumard is situated right in hte heart of Anjoy, in the town of Rochefort-sur-Loire, just south of the town of Savennieres itself. The property has been in the Baumard family since 1634 but it was reconstituted and improved by Jean Baumard in the mid-1950s. Since 1992 the estate has been run with the meticulous care of Jean's son Florent and the Domaine is now regarded as one of the greatest producers in the Loire Valley and one of the greatest producers of white wine in the world.

Beaucastel Hommage 1/1500 2005 
Characteristics: Its deep color serves as a prelude to strong scents that are bold but never excessive. It combines smoothness and austerity, telling of the perfection of its terroir. This is a passionate wine. 11% alcohol by volume.

Drouhin Chassagne-Montrachet Blanc 2017 
Characteristics: Joseph Drouhin 2009 Chassagne-Montrachet | 13% | From the renowned vine clad village of Chassagne-Montrachet in the Côte des blancs in the south of the Côte de Beaune of Burgundy and the tranquility of the 2009 vintage, this combines the charm of calm with the verve of Chassagne. Mid slope vineyards ensure the best of every vintage and this is no exception. Fragrant and florid even down to its flavorsome impact on the palate, this is a pure and shining example of not only the angelic power of Chassagne-Montrachet but the clear interpretation when fostered by the hands of Drouhin –an elegant house nonpareil. Despite all its creamy cedar and blossom, verve and texture, the minerality of Chassagne-Montrachet comes through clearly suggesting I have pulled the cork at a lovely time in its development. A deft balance makes quite the impression and perhaps it is for 12 months in (25% new) oak barrels. For table talk, the Drouhins tell us how the name Chassagne comes from "cassanos" a Celtic word used for a place where oak trees grow while the "rachet" means a poor, dry, infertile soil, “a paradox when thinking of the richness of the Chassagne-Montrachet wines!” I can only imagine what this might express on a Fruit or Flower day –such a marvelous wine here and now.

"A generous and elegant wine. Light golden colour. Intense nose of flower, brioche and candied lemon aromas, evolving towards nuances of grilled hazelnut and spice as the wine matures. On the palate, the wine is straightforward, with a nice texture and finesse. It has a long aftertaste where floral and gingerbread notes dominate".

Gaillard Cote-Rotie Rose Pourpre 2004 
Characteristics: Pierre Gaillard’s 2004 Rose Pourpre is strong, refined and worth ageing. Derived from the parcel of Côte Rozier on the slopes of Ampuis from a gifted parcel just below the justly famous La Landonne vineyard whose wines retail between $400 and $500 a bottle, this south facing amphitheater is comprised of the same brown schist, rich in iron oxide and remains one of the warmest parts of Côte Rôtie. This plot, measuring less than two acres, turns out exhilarating Syrah wines with extremely peppery noses balanced by the sweet and sour tension of plums and roasted meats. Given ten years to come into its own and mature into a great wine, the 2004 Rose Pourpre embodies this to be sure but now also bears tertiary notes of lofty pine resin and heady roses in bloom –all grounded by a meaty bouillon bottom –there is nothing like an aged Syrah that is still fresh despite all these savory, dry roasted mushroom depths. This is a fragrant wonder just opening into a glorious and graceful stride.

Girardin Santenay Blanc Clos de Tavannes 2010 
Characteristics: Biodynamic | In the south of the Cote d'Or, north of Gravieres in Santenay and just south of Chassagne-Montrachet rests the Premier Cru Clos de Tavannes from which Vincent Girardin crafts this exceptional Chardonnay rich in the lifted scents of tangerines and grounding apricots. In the mouth one can practically taste the mineral from low yielding vines planted to clay marl soils that set this parcel apart in a flinty character that could well define dry extract. Nervy acids and a rounded texture prove twelve months in barrel helped tame this racy Chardonnay into a polished and creamy white of orchard fruit, freshly chopped fennel, and an almost Chablisienne sort of cut and punch together with the sapid charms of Chassagne-Montrachet. A wine that turns you on your heel and smiles "look at me and adore me" in a way one cannot but help.

From 55 years old vines located in the Santenay Village area, in the south of the Côte de Beaune. The "Clos de Tavannes” vineyard is just near the famous 1er Cru Les Gravières and on the boarder with the village of Chassagne. The soils here are comprised of clay and limestone. The subsoil is composed of different limestone layers (pebbles, marly soils). The slope is quite strong. This is naturally 100% Chardonnay pruned Guyot and harvested by hand and sorted out when picking the grapes. After whole pressing, cold settling and gentle racking, the wine is put in French oak casks (15% of new oak) of 500 liters named "demi-muids”. The primary and malolactic fermentations can then begin with wild yeasts.

The ageing is long on fine lies during 14 months. A month before the bottling, the wine from the different barrels is put in a stainless steel tank to make the blend. The wine is finally fined and gently filtered before bottling it following the lunar calendar ("fruit” day to get a wine on freshness and minerality).

The whites are dry and full-bodied. A fleshy wine with notes of dried and preserved fruits and honey combined with a nice acidity level which brings a nice balance and a good mineral length.
